Remo Carbone Is Turning a Butcher’s Eye Into Data

The MEQ Solutions co-founder spent years teaching cameras and probes to read red meat. Now his company is trying to make objective measurement the common language of a global supply chain.

A carcase does not arrive with a spreadsheet. For most of the red-meat trade’s history, value has depended on trained people looking, touching and judging at speed. The eye learns marbling. The hand learns firmness. Experience becomes a kind of instrument, excellent but difficult to copy, audit or send back down the supply chain. Remo Carbone looked at that arrangement and saw a missing language. If quality could be measured consistently, the producer, processor, brand and buyer might finally be discussing the same animal with the same evidence.

That premise became MEQ Solutions, the Australian technology company Carbone co-founded and now leads as chief executive. Its devices measure red meat at different moments: MEQ Live for standing animals, MEQ Probe for hot carcases, MEQ Camera for chilled carcases, and MEQ Insights for making the resulting information useful. The names are plain because the problem is gloriously untheatrical. Meat moves quickly. Plants are unforgiving. A clever model that interrupts production is simply a new variety of nuisance.

Carbone’s preferred phrase is more ambitious: “truth infrastructure.” It sounds grand until you consider the alternative. When evidence arrives late, or not at all, breeders, feedlots and processors make expensive decisions with partial information. An objective reading can travel. It can influence payment, product sorting, brand consistency and the next generation of breeding or feeding choices. The measurement is only the opening move.

01 · The commercialiser

A founder trained to cross borders

Carbone did not take the usual single-lane route into agricultural technology. Public profiles record parallel bachelor’s degrees in finance and in management and marketing, followed by a master’s in science and technology commercialisation at the University of Adelaide. Later came artificial-intelligence study at MIT. The combination reads like a syllabus for the job he eventually chose: understand the mechanism, understand the market, then carry one toward the other without dropping either.

He had already spent years building companies. He founded Wasted Spaces in 2000 and co-founded Availer in 2016. He also advised startups and investors. Two recommendations on his public LinkedIn profile dwell on his strategic questions, critical thinking and ability to turn an idea into a plan that a team could execute. None of this is the biography of a laboratory purist. It is the biography of a translator.

MEQ began around research into measuring meat quality. A 2021 account of the company’s origins describes Carbone and co-founder Andrew Grant being introduced to academic work in early 2017. There is a charming difficulty embedded in that origin: the science could tell them something valuable, but the industry needed a product that could tell it reliably, quickly and in a hostile environment. Commercialisation was not a ceremony at the end. It was the whole plot.

02 · The long proof

Accreditation before applause

The first public breakthrough arrived in lamb. In November 2021, ABC Rural reported that MEQ’s probe had received AUS-MEAT accreditation to measure intramuscular fat in lamb carcases. It was already being used at Gundagai Meat Processors. Carbone’s next goal was adoption across lamb and a move into beef marbling. The sequence was revealing: use, accreditation, broader use, adjacent species. One rung at a time.

The product itself tackled a stubborn information gap. A processor could measure eating-quality indicators and pass them back to producers, who could then adjust selection and management. Data would no longer end its journey at the abattoir door. This mattered to Carbone because he saw the meat plant as a collection of disconnected machines. After attending IFFA in Frankfurt in 2022, he wrote that the equipment covered several football fields, yet poor data sharing left much of its intelligence stranded. He wanted modern feedback loops in a world of stainless steel.

The camera made that ambition visible. Fitted into a rugged case, the system uses 3D video and multiple models to estimate marbling, yield and ribeye area in the brief interval available on a moving line. It looks less like a robot overlord than a phone dressed for difficult work. This is one of industrial AI’s recurring jokes: the intelligence becomes credible when the packaging becomes boring.

By 2025, JBS Australia had received facility approval to use the MEQ cold-carcase camera at Beef City, with installations also operating at Dinmore and Riverina. Carbone said the system could reduce grading variability and give the processor confidence in consistency across domestic and export products. The wording matters. He did not sell a camera as a gadget. He sold confidence as an operational outcome.

Then came the United States. In August 2025, the Department of Agriculture announced that MEQ Camera V2 was approved to predict official beef marbling score, ribeye area, preliminary yield grade and yield grade. MEQ described it as the first video-based system approved for official use. The camera was already deployed in American plants, including Sustainable Beef in Nebraska. A Melbourne-born company had carried its measurement logic into one of the industry’s most regulated markets.

03 · The bigger wager

The cow was never the contrarian bit

The timing supplied an irresistible headline. MEQ built for conventional meat while money and attention poured into alternatives. Carbone told Forbes Australia that he never considered livestock likely to be replaced, though he rooted for the companies trying. The comment is generous and precise. His wager was not a culture-war wager on what people ought to eat. It was a commercial wager that an enormous existing system would still need better information.

He had also been writing about the system around the product. In published essays, Carbone argued for better data sharing in processing plants, predictive maintenance, stronger collaboration between manufacturers and plants, and technology that could add value to Australian agricultural exports. On climate, he cast innovation as a route to producing more efficiently. Across the pieces, the personality on the page is consistent: practical, systems-minded and suspicious of isolated improvements.

That systems view explains why MEQ now has four products rather than one perfect probe. Live measurement can inform feeding. Hot-carcase measurement can reveal eating quality. Cold-carcase imaging can support grading and sorting. The software layer can connect readings to commercial decisions. Each tool works alone, but the full proposition emerges when the readings meet. The company is building a sentence, not a collection of nouns.

04 · Capital for the unglamorous work

Scaling the second opinion

Approval widened the doorway. In December 2025, MEQ announced a A$23 million, or US$15 million, Series A led by Insight Partners. The company said the money would expand its team, strengthen operations and deepen collaboration in Australia, New Zealand, Brazil and the United States. Carbone stressed operational excellence. It was a suitably sober priority for a company whose software must coexist with hardware, regulators, customers and real production lines.

The investment also sharpened MEQ’s claim. Carbone was no longer merely proposing a better grade. He was proposing a measurement and verification layer across a trade worth more than US$1 trillion annually. The language of “truth infrastructure” becomes clearer here. Infrastructure is useful because many parties can rely on it without recreating it. A trustworthy measurement can be valuable to the processor who sorts a carcase, the producer who selects genetics and the brand promising consistency.

There are relationships tucked inside every reading. MEQ’s progress has involved researchers, processors such as JBS and Gundagai, industry bodies including AUS-MEAT and Meat & Livestock Australia, American regulators, and an investor better known for software. The network is part of the invention. Industrial technology rarely advances through a founder’s will alone. It advances when institutions with different incentives agree that the same number means the same thing.

Carbone’s public posture is notably team-forward. When MEQ won Manufacturer of the Year in 2024, he pointed to the combination of engineering and data science. When MEQ Live later collected awards in Australia and at the Asia Pacific ICT Alliance program, his posts praised the people presenting, building and testing it. The founder remains visible, but the work is described as accumulated effort. Hardware has a way of enforcing humility. It remembers every neglected screw.

05 · What to steal

Find the expensive guess

The portable lesson in Carbone’s career is not “put AI in agriculture.” It is more exact. Find a judgement that carries commercial weight but cannot easily travel. Build a measurement that fits the existing workflow. Earn the standard that lets others trust it. Then return the result to everyone who can make a better decision from it.

This approach requires patience because every advantage creates another obligation. A more accurate reading must also be fast. A faster device must also be rugged. A rugged tool must also integrate. An integrated product must also be approved. Approval must produce adoption. Adoption must generate information worth sharing. The chain is long, and skipping a link merely moves the failure downstream.

Carbone’s aspiration is now visible in MEQ’s map: objective measurement from the live animal through the finished product, deployed across multiple continents. The camera is the most photogenic piece, but the deeper work is institutional. A supply chain organised around partial views needs a common view. The trained butcher’s eye will not disappear; it will gain a colleague with a memory, an audit trail and a talent for sending notes.

For a founder who studied both finance and marketing before learning how science reaches a market, this feels like a fitting destination. The machine reads meat. Carbone’s job is to make the rest of the world read the machine. He is still translating between evidence and action, only now the conversation runs across three continents.
